Eating Ghanaian Food: Kenkey With Fish

by | Jul 7, 2010 | Ghana, Stories, W. Africa

kenkey with fish

Kenkey is a maize mixture that has been soaked in water and fermented. It is served with pepe (a hot sauce) and some mini-tilapias. Kenkey is heavy and dense. It tastes like exceptionally sour sourdough bread. I’m not crazy about it (give me fufu or banku any day), but I feel like it’s important to oblige the person that invited me into their home. The sauce is made from crushed tomatoes and chiles. Spicy, salty, delicious. The tilapia in Ghana is hit or miss. Sometimes it tastes incredibly fresh, other times it tastes like dirt.

Step 1: Washed hands? Check. As is the case in many places where people eat with their hands, one hand is used for dirty tasks and the other for eating, shaking hands etc. In Ghana, the right hand is for eating. You will get reprimanded if you use the left. To the Ghanaian spectator, you might be eating with the hand you just used to wipe your ass. A basin is always provided so you can wash your right hand before eating.

Step 2: Kenke in the right hand, scooping up some fish and sauce.

Step 3: Yum.

Step 4 (not pictured): My ass erupting on the toilet

Sam, if you’re reading this, I hope that Don Simon carton is making you thirsty.

Here are two more rules of Ghanaian citizenship. Maybe the most important ones:

Thanks man. It is definitely worse than Colombian fare. It is my least favorite meal in Ghana. What’s the mood in CTown? People burning cars and what not? When and where are having destination music making?

MCKANE – I need you !!!! I’m getting better though. Lots of bananas are helping. Miss you!!
